The ingredients needed to make Rice and Chicken(Kuku kienyeji):
- Make ready Full chicken
- Prepare Vegetable oil
- Take Chicken stock
- Make ready 3 Tomatoes
- Take 1 onion
- Prepare 1 bunch coriander leaves
- Prepare Garlic
- Make ready 2 tablespoons Curry powder
- Get 1 tablespoon salt
- Take 3 glasses pishori rice
- Take 1 teaspoon turmeric powder for the rice
In a large bowl mix all the ingredients except chicken. Add in chicken and cover well with marinade. Kienyeji chicken is very different in flavour and texture from the broilers. It is tougher and hence requires more cooking time.
Instructions to make Rice and Chicken(Kuku kienyeji):
- Ensure the chicken is cut into smaller pieces before boiling it for atleast 1 hour and put away some chicken stock once the meat is properly boiled.
- Put some vegetable oil in a cooking pot and fry one big chopped onion till it turns golden brown. Add the curry powder and salt at this point.
- Add in the tomatoes and allow it to cook for a while till it forms a thick red paste.
- Add the chopped garlic in the pot for some flavour.
- Once the main ingredients have cooked, add the chicken pieces you had boiled earlier in the cooking pot, and stir gently.
- Add the chicken stock to enable your chicken to have thick gravy and sprinkle the chopped corriander leaves on it then let it simmer for 15 minutes.
- For the rice, boil 6 glasses of water and once it boils add the turmeric, salt and some oil.
- Wash your rice and once its well drained put it in the pot with boiling water and let it cook till the rice puffs up.
- Serve your chicken with the rice and enjoy the meal.
In fact, it is not advisable to try and roast a kienyeji chicken. Unless it is a young one. Then add the chicken, coconut milk, salt and pepper. Adjust salt and pepper, to taste. Serve with with rice or chapatti.
